not my normal schedule...

So the past few days my days are not near normal. My mom is in town and there are things that you do when people come in town that just are not your norm. Its been fun and we have some more days so my blogging has slowed down.

In the midst of this visit we are doing the detox, and it is challenging me to cook differently. I am looking up recipes every day trying to cook either eggplant, lentils, artichoke or quinoa (thanks to paige!). I find it exciting and fun to learn the whole new world of cooking healthily :) So i wanted to share a recipe with you that Kimmel really liked! The only ingredient we couldn't add was the bacon...so i am sure yours will be a bit nicer. I found it on a blog somewhere i wish i knew i copy and pasted the recipe before i noted who or where it came from to give credit. Sorry.

Lentil Soup

1 large organic yellow onion, chopped
4 organic carrots, cut in half lengthwise then chopped
2-3 large garlic cloves, minced
2 tablespoons organic tomato paste
1.5 cups lentils, picked over and rinsed (i drained the can and rinsed)
1/2 teaspoon dried thyme or 1 tablespoon of chopped fresh thyme
3.5 cups of reduced-sodium free range organic chicken broth
1 tablespoon red-wine vinegar
3 strips bacon, cut into 1/2 inch pieces (can be omitted for vegetarians, substitute 1 tbsp of olive oil to cook onions and carrots)

in a large pot with a lid, cook bacon until browned and crips, 8-10 mins
Drain grease, reserving 1 tablespoon in pot.
Add onion and carrots to bacon; cook until softened.
Stir in garlic.
Add tomato paste and cook 1 min
Add thyme, lentils, chicken broth and 2 cups water.
Bring to a boil; Reduce to a simmer and cook for 30-45 mins until lentils are tender
Stir in vinegar, season with salt and fresh ground pepper.
Serve with crusty bread!
