Easy cooking

Once again i found a SUPER recipe that is so yummy and my hubby wanted to take it for lunch the next day! (thats when i know its a good one :)) We like mexican around here. Tex- mex or just plain ol mexican. I get weekly emails from Kraft Foods and they have these awesome easy recipes to follow. So once again i share from there.



Layered Fiesta Casserole
1 lb. extra lean ground beef
1 green pepper, chopped
1 red pepper, chopped
1 jar (16 oz) of salsa
1 can Diced tomatoes, undrained ( i used rotel for added spice)
1 pkg. (10oz) frozen corn
12 corn tortillas (6 inch) (i used flour)
1-1/2 cup shredded sharp cheddar cheese, divided

Heat oven 375
Brown meat with peppers in large skillet; drain. Return to skillet. Stir in salsa, tomatoes and corn.
Spread 1 cup meat mixture onto bottom (we put two cups) of 13x9 dish; top with 6 tortillas, overlapping as necessary. Cover with layers of half each of the remaining meat mixture and cheese; top with remaining tortillas and meat mixture. Cover
Bake 25-30 mins or until heated through. top with remaining cheese; let stand, uncovered for 5 mins until melted.
